Ingredients for 2:

4 eggs

320g Truffle Paddock Fancy Beans

A pinch of Truffle Paddock salt (plain or black garlic for a more smokey flavour)

A small baguette or your bread of choice

Parsley, chopped and drizzled at the end.

Method

If you don’t have a sous vide, here’s good reason to practice your poaching skills. Just grab some Truffle Paddock Fancy Beans and heat gently (they’re really affordable at $9 for a 320 gram jar which will provide a good size breakfast for two), and poach or sous vide your eggs.

Serve the beans onto your dish, then carefully drop your poached eggs into the centre. Add a small baguette or your favourite bread on the side.

To finish, sprinkle some Truffle Paddock salt on the egg when served, along with some fresh parsley, and voila!
