Join Winemaker and Truffle aficionado Tom Newton for this Season Ending Matched Wines Truffle Feast. Here are his wine matching notes:
Starting with Sparkling from Tasmania, cool climate finesse with time on lees complexities work with the richness of the pate and condition the palate for what is yet to come. Get the juices flowing!
Then a classic true Pinot Gris style from a recognised Alsace maker, rich and ripe with a hint of residual sugar to complement the sweetness of the pumpkin and tartness of the blue cheese. A cool climate Australian Chardonnay follows. Fine bright, with a hint of natural yeast mush-roomy complexity, it will sing with the slight oiliness and flavour of the Kingfish.
Duck and Pinot Noir – a match made in heaven! The New Zealand Pinot Noir, a fuller riper style with complexity from whole bunch fermentation, is often described as being like the forest floor – where the truffles thrive! We finish with a sparkling red with dessert. Rich and velvety, sweet and yet refreshing – a perfect finale.
